Han's Mongolian BBQ Sauce Ingredients: 1-1/2 Dark Soy Sauce 6 Cups Water 10 Crushed Black Peppercorns 4 Star Anise 4 Large Cloves of Garlic 1 Cup Rice Wine 1 tblsp sugar 1 tsp fresh grated ginger 1 big bunch scallions or 1 leek chopped 1 bunch cilantro minced Simmer the soy sauce, water peppercorns, anise and garlic for a few minutes in a saucepan then strain and cool. Add theRice wine, sugar, ginger, 2/3rds of the scallions, and 2/3rds of the cilantro. Taste to correct the seasoning. Add scallions and cilantro as used up. Using the Sauce Steam a pot of thin rice noodles and set aside In a hot skillet add a bit of peanut oil and throw in: Finley diced carrots and/or peppers and/or mushrooms and/or whatever after those have begun to cook throw in: Thinly sliced Pork and/or Chicken and/or beef after those have begun to cook throw in: Sprouts and/or Cabbage and/or Spinach and/or Lettuce Squirt or pour about 1 tblsp of water. This will steam up and wilt the last veggies you've put in. Mix all the stuff up a bit and push it to one side of the pan. In the space created put about a cup and a half of the rice noodles and ladel your Sauce on to them. Let the whole show simmer for a couple of minutes then load it into a bowl to serve. Since it's made one bowl at a time each person can choose how they want it. Garnish each bowl with fresh scallions, cilantro, lemmongrass or whatever and enjoy!
